Homemade Spelt and Flax Tortillas

  • 1 1/2 Cups 6oz Spelt Flour
  • 1 1/2 Cups 6oz Unbleached White Flour
  • 3/4 Tsp. Salt
  • 4 Tbsp. Melted Coconut Oil or Olive Oil
  • 2 Tbsp. Ground Flax Seed
  • 1 Cup 8oz Water
  1. Mix all the ingredients together to form a soft dough. If your dough is very sticky at this point you can add an extra tablespoon of flour. Cover and rest for 20 minutes
  2. Cut your dough into 16 pieces. Cover the pieces and work with one at a time. Gently roll it into a ball. On a well floured surface, roll the dough ball out into a circle. It should be thin.
  3. Place the tortilla on a pan preheated to medium high heat. Cook for about 1 minute, or until it starts to brown/blister on that side. Flip and cook an additional minute.
  4. Continue with the remaining dough
