Homemade Spelt and Flax Tortillas
- 1 1/2 Cups 6oz Spelt Flour
- 1 1/2 Cups 6oz Unbleached White Flour
- 3/4 Tsp. Salt
- 4 Tbsp. Melted Coconut Oil or Olive Oil
- 2 Tbsp. Ground Flax Seed
- 1 Cup 8oz Water
- Mix all the ingredients together to form a soft dough. If your dough is very sticky at this point you can add an extra tablespoon of flour. Cover and rest for 20 minutes
- Cut your dough into 16 pieces. Cover the pieces and work with one at a time. Gently roll it into a ball. On a well floured surface, roll the dough ball out into a circle. It should be thin.
- Place the tortilla on a pan preheated to medium high heat. Cook for about 1 minute, or until it starts to brown/blister on that side. Flip and cook an additional minute.
